Terri’s Tabouli
Every year, friends from Jacksonville, FL , join us for Sportsman’s Lobster days and every year Terri Hall brings her special fixings for the best Tabouli we’ve ever tasted. This year she was kind enough to share her recipe.
There’s nothing better than fresh caught grilled lobster and Terri’s cool, tangy tabouli after a day on the water. Tabouli is a refreshing change from the standard green salad so pair it with fish, chicken or beef ,if you don’t have lobster. Randy Goldman, another Jacksonville friend, likes to fill a pita pocket with tabouli for a healthful sandwich.
2 large cucumbers (peel and remove seeds)
2 large tomatoes (remove seeds)
1 bunch green onions
1 bunch parsley
Chop all the above

¾ cup wheat – rinse in cold water to clean
Soak for 30 minutes in just enough water to cover wheat

Combine wheat with chopped vegetables

Mix in:
2 oz. vegetable oil
4 oz. lemon juice or more to your taste
salt and pepper to taste

Serves two -- enjoy!
